Is it a struggle for you to get your kids to eat veggies? Some days, my little one will have no trouble eating all her veggies and other days it is a struggle. These muffins are so easy to make and you can be as sneaky as you want with loading them up with their veggies and they will never know! I tried these on a little guy who won’t go near a vegetable and he had NO idea and ate them all up! Actually, he asked for more! Tried and true. Gives you the peace of mind that your child has had their veggies, no matter how sneaky you have to be. I called these baby/toddler muffins because I made these for my daughter when she was starting out with eating table food, moving away from the purees. She has loved them ever since. The other nice thing about these muffins is that they are very versatile. You can switch up the veggies in them and the options are endless! Let me know if you use a different combo of veggies. I would love to hear! I did get the recipe from The Bakermama. She gives the suggestion of even using pumpkin and zucchini, which I have done before and they are delicious! I say it all the time but you can’t go wrong with a recipe you throw all the ingredients into one bowl! Easy clean up!
- 1 cup whole wheat flour
- 1 cup oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 banana mashed
- 1 avocado mashed
- 1 cup applesauce
– Preheat oven to 350* Lightly spray mini muffin pan with non stick spray.
– In a large mixing bowl, mix all dry ingredients together.
– Make a well in the dry ingredients, add the wet ingredients. Mix well until combined.
– Divide the batter between the mini muffins
– Bake for 12-14 minutes
*Store in airtight container
**My batter, did not fill all 24 muffins. I probably overfilled, which I usually do. Oops.
